Disneyland's Peanut Butter Cookies

  • 1 c. butter
  • 1 c. creamy peanut butter
  • 1 c. granulated sugar
  • 1 c. packed brown sugar
  • 1 t. vanilla extract
  • 3 eggs
  • 4 c. all purpose flour
  • 2 t. baking soda
  • 1/4 t. salt
  • 1 c. peanut butter chips
  • 1/4 c. granulated sugar (for rolling the cookies)


  1. Preheat oven to 375 degrees.
  2. In a large bowl, cream together butter, peanut butter, sugar and brown sugar.
  3. Add vanilla and mix
  4. Add the egss, one at a time, mixing well after each one.
  5. In a separate bowl, mix the flour, baking soda and salt together. Add to mixing bowl and stir until completely combined.
  6. Fold in peanut butter chips.
  7. Roll dough into 1 1/2 inch balls (about walnut size)

  8. Place the 1/4 c. sugar in a shallow bowl and roll each ball of dough in the sugar until completely covered.
  9. Place the rolled dough on a baking sheet lined with parchment paper or sprayed with non-stick cooking spray and gently press each dough ball down to about 1/2 inch thick.

  10. Bake the cookies for 7-9 minutes.
  11. Allow the cookies to cool on the cookie sheet for about 5 minutes. Move them to a wire rack (or paper towel) to finish cooling.

  12. Note: these cookies are very soft. You don't want to overbake them or let them turn brown. They will continue to set up as they cool.
